  これだと意味が逆になってしまいませんか?
  ssmtp が envelope を上書きする、ではなく、ユーザが envelope を上書き
するのを許可する、のはずです。

  apt-get source ssmtp して debian/postinst を見ると、この問いの答えは
ssmtp.conf の FromLineOverride に使われています。
  ssmtp.conf のサンプルには下記の記述があります。

# Set this to never rewrite the "From:" line (unless not given) and to
# use that address in the "from line" of the envelope.
#FromLineOverride=YES
