「GNOMEのメニューの日本語化できない」という問題に
ついてです。

とりあえず、日本語フォント関係はこのあたりかなと思い、以前
ii  xfonts-intl-ja 1.2-2.1        International fonts for X -- Japanese.
を後から追加しました。設定は特にしておりません。
フォント関係のパッケージは以下が入っております。

ii  gsfonts        6.0-2          Fonts for the ghostscript interpreter
ii  gsfonts-x11    0.16           Make Ghostscript fonts available to X11.
ii  libfreetype6   2.0.9-1        FreeType 2 font engine, shared library

ii  xfonts-75dpi   4.1.0-16       75 dpi fonts for X
ii  xfonts-base    4.1.0-16       standard fonts for X
ii  xfonts-intl-ja 1.2-2.1        International fonts for X -- Japanese.
ii  xfonts-scalabl 4.1.0-16       scalable fonts for X
ii  xfs            4.1.0-16       X font server
ii  xfs-xtt        1.3.0.xf420-4  X-TrueType font server


> のどちらでしょうか。後者ならフォントの設定がうまく行っていない

一番最後の部分を自分で書きました。
